Pina Colada Martini

"Had a similar drink at Burton's, a local restaurant, and loved it. After a few trials, this comes pretty close. Can make multiples just using the same ratio."

Loved this and easy to make! Had 2 tonight and will make again! Used triple sec instead of curacao.

Made a few tweaks to knock down the sweetness level just a tad while still keeping the fun, tropical flavors.

Made last night at Sister#2's house and by the time I got home and crawled up the stairs, it was too late to recall that I'd left my brain in my car. Made for A/NZ#57 Recipe Tag.

So I stuck with the pineapple juice and the coconut rum as the recipe suggests. But I went with plain, chilled vodka (a half ounce), opting instead, to add a split half vanilla bean to the cocktail shaker (instead of going with the vanilla-flavored vodka). I used dry curaçao, which is not blue but more of a dark orange (as it is a liqueur made from the peels of bitter curaçao oranges), and is a little less sweet, as the name implies. I also added a half ounce of lime juice to sort of balance the overall sweetness with a touch of tart.
